Description

Pineapple Pretzel Salad is a delightful blend of salty and sweet flavors. With its creamy cheese layer and fresh pineapple, it’s perfect for parties and gatherings!

Ingredients

Scale
  • 5 cups mini pretzels, crushed
  • 1 ¼ cups granulated sugar, divided
  • 3/4 cup unsalted butter, melted
  • 12 ounces cream cheese, softened to room temperature
  • 1 ½ teaspoons vanilla extract
  • 16 ounces whipped cream, such as Cool Whip, thawed
  • 1 cup water, boiling
  • 40 ounces crushed pineapple, in 100% juice, 2 (20-ounce) cans
  • 6 ounces pineapple Jello, 2 (3-ounce) boxes
  • 1 small can pineapple chunks, optional, for garnish

Instructions

  1. Preheat the oven to 350 degrees.
  2. Prepare a 9×13 baking dish by spraying it with non-stick cooking spray and set aside.
  3. Combine crushed pretzels and ½ cup of sugar in a medium bowl, stirring to mix.
  4. Add the melted butter to the pretzel mixture, stirring until fully coated.
  5. Spread the pretzel mixture evenly in the baking dish and press firmly to create a solid base.
  6. Bake the pretzel crust for 10 minutes and then let it cool completely.
  7. In a large mixing bowl, add softened cream cheese and beat until smooth with a mixer.
  8. Mix in the remaining ¾ cup of sugar and vanilla, beating for an additional minute.
  9. Fold in 12 ounces of thawed whipped cream until fully incorporated with the cream cheese mixture.
  10. Spread the cream cheese mixture evenly over the cooled pretzel crust, sealing the sides to prevent jello leakage.
  11. In a large bowl, pour boiling water and sprinkle both pineapple Jello packets, stirring until dissolved.
  12. Drain juice from one can of pineapple and add the pineapple to the jello mixture, then add the second can of pineapple with juice, stirring to combine.
  13. Chill the jello mixture for 20 minutes or until slightly thickened and cool.
  14. Pour the jello mixture over the cream cheese layer and spread evenly.
  15. Cover with plastic wrap and chill for at least 4 hours, or until jello is completely set.
  16. Slice and serve with a dollop of the reserved Cool Whip and a piece of pineapple, if desired.

Notes

For fluffier texture, make sure the cream cheese is fully softened before mixing.
You can adjust the sweetness by modifying the amount of sugar added to the cream cheese mixture.
Garnishing with extra pineapple chunks adds a fun, colorful touch.
