Description

  • 15 oz canned pure pumpkin
  • 1 1/2 cup sugar
  • 2 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1 tsp cornstarch
  • 3/4 cup apple juice
  • 12 tbsp butter melted
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 3 cups flour

Instructions

  1. Prepare the pumpkin filling by whisking together pumpkin purée, 1½ cups of sugar, pumpkin spice, and cinnamon in a saucepan.
  2. Combine cornstarch and apple juice in a small bowl until there are no lumps, then mix it into the saucepan.
  3. Cook over medium heat until the mixture boils, then lower the heat and simmer for about 10 minutes. Let it cool completely after removing from heat.
  4. In a mixing bowl, beat melted butter with 1 cup of sugar using a hand mixer until thickened for 2-3 minutes. Mix in molasses and egg until smooth.
  5. Incorporate baking soda, cinnamon, pumpkin pie spice, salt, and flour until a soft dough forms. Adjust with more flour if needed.
  6. Chill the dough in the fridge for 30 minutes. Preheat the oven to 350°F and roll out the dough to ¼ inch thick.
  7. Cut out the dough using a pumpkin-shaped cutter and shape for faces using a knife for eyes and a mouth.
  8. Spoon pumpkin filling onto the bases and top with face cookies, pressing edges to seal.
  9. Bake on a parchment-lined baking sheet for 10-13 minutes until cooked through and cool before serving.

Notes

Make sure the pumpkin filling is completely cooled before assembling the cookies.
Adjust flour as needed to avoid sticky dough when rolling out.
Store any leftover cookies in an airtight container to maintain freshness.
