- 3 cups whole milk
- 1 (15 oz) can pumpkin puree
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 tsp vanilla
- 2 tsp pumpkin pie spice
- 6 eggs
- 1/2 cup butter, cold & cubed
- 1/2 cup brown sugar
- 1/2 cup flour
- 1 tsp pumpkin pie spice
- 1 cup pecans, chopped, optional
Instructions

- In a large mixing bowl, combine the milk, pumpkin puree, sugar, brown sugar, vanilla, pumpkin pie spice, and eggs. Whisk until combined.
- Pour the mixture evenly over the bread cubes, pressing them down with a fork to help soak in the mixture.
- Cover the dish and refrigerate for at least 3 hours.
- Preheat the oven to 350 degrees before baking.
- In a food processor, combine the cold, cubed butter, brown sugar, flour, and pumpkin pie spice to create the streusel topping, pulsing until crumbly.
- Sprinkle the streusel mixture evenly over the casserole, adding chopped pecans if desired.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Notes
For best results, prepare the casserole the night before to let the bread soak overnight.
Feel free to add your favorite nuts or dried fruits for more texture.
