Description

These Pumpkin Waffles are a delightful combination of flavors, perfect for breakfast or brunch. Made with fresh pumpkin puree and spices, they offer a comforting and hearty start to the day. Easy to prepare, these waffles are ideal for anyone seeking a simple and delicious homemade recipe.

Ingredients

Scale
  • 3 large eggs, separated
  • 2½ cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoons ginger powder
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 2¾ cups milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat a waffle iron and spray with nonstick cooking spray.
  2. Separate the eggs, placing the whites into a large mixing bowl and setting the yolks aside. Beat the egg whites until stiff peaks form and set aside.
  3. In another bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Create a well in the center, then add egg yolks, pumpkin puree, milk, vanilla extract, and vegetable oil. Whisk until just combined, leaving some lumps.
  4. Gently fold the beaten egg whites into the batter until no streaks remain, being careful not to overmix.
  5. Pour the batter into the preheated waffle iron according to the manufacturer's directions, cooking until golden brown on both sides.
  6. Serve warm with butter, maple syrup, and your favorite toppings.

Notes

For extra flavor, try adding chopped nuts or chocolate chips to the batter.
Make sure to avoid overmixing the batter once you add the egg whites for light, fluffy waffles.
These waffles freeze well—store them in a freezer bag for a quick breakfast option later.
