- 2 cups (250 grams) flour
- 2 cups (180 grams) rolled oats
- 1/2 cup (100 grams) granulated sugar
- 1/2 cup (100 grams) light brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (225 grams) unsalted butter, room temp
- 1 teaspoon vanilla extract
- 2 1/2 cups (355 grams) fresh or frozen raspberries
- 7 tablespoons (125 grams) raspberry jam
- 1/2 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat the oven to 350 F (175 C) and line an 8"x8" pan with parchment paper.
- In a large bowl, combine the flour, oats, granulated sugar, brown sugar, cinnamon, baking soda, and salt until mixed well.
- Cut the butter into small cubes and add to the dry mixture. Use your fingers to mix until the dough starts to come together.
- Drizzle vanilla extract over the dough and mix until fully combined, creating a dough that appears abundant for an 8"x8" pan.
- Press about 2/3 of the dough into the bottom of the prepared pan to form the crust.
- In a separate bowl, mix the filling ingredients to ensure the raspberries remain firm.
- Spread the raspberry filling over the crust, leaving about 1/3" border around the edges to prevent leakage.
- Sprinkle the remaining crumble mixture over the top of the jam, lightly pressing it down.
- Bake for 30-40 minutes until golden brown and bubbling, then transfer to a cooling rack to cool completely for about 2 hours before chilling for 2-3 hours or overnight before slicing.
- Store in an airtight container in the fridge for up to 5 days or freeze sliced bars for up to 3 months.
Notes
Use gluten-free oats to make the recipe gluten-free.
Feel free to substitute the raspberry jam with other fruit jams that pair well with raspberries.
Let the bars cool completely for the best texture before cutting them.
