Description

These Red, White, and Blue Tortilla Cups are a delightful combination of crispy tortillas filled with creamy whipped cream and topped with vibrant fresh berries. They are simple to prepare and make for a fun, colorful dessert or snack that’s perfect for any gathering!


Ingredients

  • 3 small flour tortillas
  • 2 tbsp. coconut oil, melted
  • 1 tbsp. honey
  • 1 tsp. ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp. natural sweetener (like Truvia)
  • 1 tsp. vanilla
  • 1 cup fresh berries (like blueberries, raspberries, and strawberries)
  • Optional: cocoa powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tortillas into quarters using a pizza slicer.
  3. In a small bowl, combine the melted coconut oil and honey until well blended.
  4. Brush both sides of each tortilla piece with the coconut oil mixture, then sprinkle with ground cinnamon.
  5. Arrange three tortilla triangles in each muffin cup to form a cup shape.
  6. Bake for 15 minutes until crispy, then remove from the pan and let cool.
  7. In a separate bowl, add whipping cream, natural sweetener, and vanilla, then beat until soft peaks form.
  8. Spoon or pipe the whipped cream into each cooled tortilla cup.
  9. Top the whipped cream with a variety of fresh berries.
  10. If desired, sprinkle cocoa powder on top for added flavor.

Notes

Make sure the tortillas are well coated for a crispy finish.
Feel free to experiment with different types of berries based on your favorites or what’s in season.
These cups can be made ahead; just fill them with whipped cream just before serving for the best texture.
