- 3 small flour tortillas
- 2 tbsp. coconut oil, melted
- 1 tbsp. honey
- 1 tsp. ground cinnamon
- 1 cup whipping cream
- 1/2 tsp. natural sweetener (like Truvia)
- 1 tsp. vanilla
- 1 cup fresh berries (like blueberries, raspberries, and strawberries)
- Optional: cocoa powder
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tortillas into quarters using a pizza slicer.
- In a small bowl, combine the melted coconut oil and honey until well blended.
- Brush both sides of each tortilla piece with the coconut oil mixture, then sprinkle with ground cinnamon.
- Arrange three tortilla triangles in each muffin cup to form a cup shape.
- Bake for 15 minutes until crispy, then remove from the pan and let cool.
- In a separate bowl, add whipping cream, natural sweetener, and vanilla, then beat until soft peaks form.
- Spoon or pipe the whipped cream into each cooled tortilla cup.
- Top the whipped cream with a variety of fresh berries.
- If desired, sprinkle cocoa powder on top for added flavor.
Notes
