- 1/2 cup grated parmesan cheese off the block
Instructions

- Wash the zucchini, pat dry, trim ends, and slice into 1/4-1/2 inch thick slices. Slice thicker for crunchier texture or thinner for softer results.
- In a mixing bowl, combine zucchini slices, olive oil, balsamic vinegar, and seasonings. Mix until evenly coated.
- Spread the seasoned zucchini in a single layer on the prepared baking sheet, ensuring space between slices for even roasting.
- Top each zucchini slice with grated parmesan cheese.
- Roast in the oven for 20-24 minutes, adjusting time for desired crunchiness.
