Description

This Shrimp Alfredo Pasta features perfectly cooked shrimp tossed with fettuccine in a rich and creamy parmesan sauce. It’s an easy and satisfying dish that’s ideal for a quick dinner or a comforting meal at home.


Ingredients

  • 1 pound fettuccine noodles
  • 1 tablespoon olive oil
  • 6 tablespoons salted butter, divided
  • 1 pound large 31-40 count shrimp, peeled, deveined and tails-off, patted dry
  • 1 tablespoon minced garlic
  • ½ teaspoon salt, divided
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons all-purpose flour
  • 1½ cups whole milk
  • 1¼ cups heavy whipping cream
  • 1 cup parmesan cheese, shredded
  • 2 teaspoons fresh parsley, finely chopped, optional garnish

Instructions

  1. Cook the fettuccine noodles in a large pot of boiling salted water until al dente, according to package directions. Drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil and 1 tablespoon of butter. Once melted, add the shrimp in an even layer and cook for 2-2½ minutes on the first side.
  3. Flip the shrimp, then add minced garlic, seasoning with ¼ teaspoon salt and black pepper. Cook for another 2-2½ minutes or until shrimp is pink and garlic is fragrant.
  4. Remove shrimp from skillet and place on a clean plate; set aside.
  5. Reduce heat to medium and add the remaining 5 tablespoons of butter. Once melted, add garlic powder and all-purpose flour, whisking for 1 minute until flour is incorporated into the butter.
  6. Slowly whisk in whole milk and heavy cream until smooth, with no lumps remaining.
  7. Allow the mixture to come to a boil, then reduce heat and simmer for 3-4 minutes until thickened enough to coat the back of a spoon.
  8. Mix in the parmesan cheese until fully melted and the Alfredo sauce is creamy.
  9. Add the reserved fettuccine noodles to the skillet and toss to coat in the sauce.
  10. Finally, reintroduce the shrimp to the skillet, garnishing with fresh parsley if desired.

Notes

For extra flavor, consider adding a splash of white wine to the sauce before thickening.
You can substitute shrimp with chicken for a different protein option.
Make sure to not overcook the shrimp to maintain their tenderness.
