Description

This Simple Peach Crisp with Oat Topping offers an irresistible blend of fresh peaches and a crunchy oat topping, perfect for an easy dessert or comforting treat.


Ingredients

  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Spray a pie pan with non-stick cooking spray and set it aside.
  2. Pit, peel, and slice enough peaches to equal 5 cups and place them in a medium-sized bowl.
  3. Mix in the sugar, cornstarch, vanilla extract, and lemon juice until well combined.
  4. Transfer the peach mixture into the prepared pie pan.
  5. In a food processor, pulse together the flour, brown sugar, and cinnamon until mixed. Add the cold, cubed butter and pulse again until crumbly. Finally, gently fold in the rolled oats.
  6. Spread the topping mixture evenly over the peaches in the pie pan.
  7. Bake for 30-35 minutes or until the top is golden brown.

Notes

For added flavor, consider using a mix of fresh and frozen peaches.
