- 5 cups peaches, sliced
- 1/2 cup sugar
- 2 tbsp cornstarch

- 3/4 cup old-fashioned rolled oats
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Spray a pie pan with non-stick cooking spray and set it aside.
- Pit, peel, and slice enough peaches to equal 5 cups and place them in a medium-sized bowl.
- Mix in the sugar, cornstarch, vanilla extract, and lemon juice until well combined.
- Transfer the peach mixture into the prepared pie pan.
- In a food processor, pulse together the flour, brown sugar, and cinnamon until mixed. Add the cold, cubed butter and pulse again until crumbly. Finally, gently fold in the rolled oats.
- Spread the topping mixture evenly over the peaches in the pie pan.
- Bake for 30-35 minutes or until the top is golden brown.
Notes
