Description

These Strawberries and Cream Cookies offer a delightful mix of buttery goodness and bursts of strawberry flavor, making them an easy and scrumptious dessert that is perfect for sharing with friends and family.


Ingredients

Scale
  • 3 cups (360 g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (227 g) unsalted butter, room temperature
  • 1 and 1/4 cups (248 g) granulated sugar
  • 1/4 cup (53 g) light brown sugar, packed
  • 1 tablespoon (14 ml) vanilla extract
  • 2 large eggs, room temperature
  • 11 ounces white chocolate chips
  • 2 1.2 ounce bags (68 g) freeze-dried strawberries

Instructions

  1. Preheat the oven to 325°F. Line two large baking sheets with parchment paper and set aside.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a stand mixer or large bowl, cream together the butter and both sugars on medium speed for about 3 minutes until light and fluffy. Scrape down the bowl and add the vanilla extract.
  4. Reduce speed to medium-low and add the eggs one at a time, beating well after each addition, and scrape down the bowl as needed.
  5. Lower the speed to low and mix in the flour mixture until just combined. Fold in the white chocolate chips and dried strawberries until evenly mixed.
  6. Using a large cookie scoop, portion out 3 tablespoons of dough, rolling into balls and placing on the baking sheets with the sides showing the most chocolate and berries up.
  7. Bake one sheet at a time for 12 to 13 minutes, until the edges are golden but the centers are soft.
  8. Once baked, use a spatula to adjust any edges that spread too much, ensuring a round shape. Optionally, press extra white chocolate chips on top before cooling.
  9. Let cookies cool on the baking sheet placed on a wire rack for 20 minutes before serving.

Notes

For best results, use a kitchen scale for measuring flour.
Allow cookies to cool thoroughly for better texture and flavor.
