Description

These Strawberry Cheesecake Chimichangas are a delightful treat, combining creamy filling with fresh strawberries. They’re easy to prepare and perfect for any dessert lover, making them an excellent choice for gatherings or a unique family dessert.


Ingredients

  • 1 (8 oz) Cream Cheese, Softened
  • 1/4 cup Sour Cream
  • 1 tbsp Sugar
  • 1/4 cup Sugar
  • 1 tsp Vanilla
  • 1/2 tsp Lemon Zest
  • 6 (8 inch) Flour Tortillas
  • 1 3/4 cups Strawberries (Diced)
  • 1 tbsp Cinnamon
  • Oil for Frying

Instructions

  1. In a mixing bowl, combine softened cream cheese, sour cream, 1 tbsp sugar, vanilla, and lemon zest. Mix until smooth.
  2. Gently fold in 3/4 cup diced strawberries.
  3. Divide the mixture among the flour tortillas, placing it in the lower third. Fold the sides over the filling and roll up tightly like a burrito. Secure with a toothpick, and repeat with remaining tortillas.
  4. In a small bowl, mix together the remaining 1/4 cup sugar and cinnamon. Set aside.
  5. Prepare a plate with paper towels for draining the chimichangas.
  6. Heat about 3 inches of oil in a large, deep pan to 360 degrees F over medium-high heat.
  7. Fry the chimichangas in batches until golden brown and crispy, turning as necessary. Drain on paper towels for 1 minute, then coat in cinnamon and sugar mixture.
  8. Repeat frying with remaining chimichangas.
  9. Remove toothpicks from chimichangas and serve with leftover diced strawberries.

Notes

For a healthier option, consider baking instead of frying the chimichangas.
These chimichangas can be served warm with a scoop of ice cream for extra indulgence.
Feel free to substitute the strawberries with other fruits like blueberries or raspberries.
