Ingredients
Scale
- 3 cups mini pretzels
- 1/4 cup sugar
- 1/2 cup butter (softened)
- 2 (8-ounce) pkgs. Cream Cheese (softened)
- 1 1/3 cups powdered sugar
- 1 1/2 teaspoons vanilla bean paste or extract
- 2 cups heavy cream
- 1 to 1 1/2 lbs strawberries (cut into half lengthwise)
- 1/4 to 1/3 cup sugar
Instructions
- Pulse the mini pretzels in a food processor until they form fine crumbs, leaving some small pieces for texture.
- If you don't have a food processor, place the pretzels in a zip-top bag and crush them with a rolling pin or a heavy measuring cup until they are fine crumbs with small pieces remaining.
- In a medium bowl, mix the crushed pretzels, melted butter, and granulated sugar until the crumbs are evenly coated.
- Firmly press the mixture into the bottom and sides of a 9-inch pie dish. Use a measuring cup or your fingers to pack it tightly.
- Chill the pressed crust in the refrigerator for 25 minutes, or freeze for 10-25 minutes until set.
Notes
Make sure the cream cheese is softened for easy mixing.
You can adjust the sugar in the strawberries based on your sweetness preference.
The pie can be made a day ahead and stored in the refrigerator.
