- 2 cups small salted pretzels (crushed)
- ¼ cup brown sugar
- ½ cup salted butter (melted)
- 8 oz cream cheese (room temperature)
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups heavy cream
- 6 oz strawberry flavored gelatin
- 2 cups boiling water
- 1 lb fresh strawberries (sliced)
Instructions
- Preheat the oven to 350°F and gather all ingredients.
- Pulse the pretzels and brown sugar together in a food processor until combined but chunky.
- Add melted butter and pulse until evenly moistened.
- Press the mixture into the bottom of an 8×8 parchment-lined baking dish and bake for 10 minutes until golden brown. Let cool completely.
- In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
- Mix in the heavy cream until fully combined and spread over the cooled pretzel crust. Refrigerate for at least 1 hour.
- Dissolve the strawberry gelatin powder in boiling water and refrigerate until thickened, about 30 minutes.
- Fold in the sliced strawberries and pour over the chilled cream cheese layer.
- Return the dish to the refrigerator and chill for 2 to 4 hours or until set. Slice and serve chilled.
Notes
Make sure to use room temperature cream cheese for easier mixing.
You can replace fresh strawberries with other berries or fruits if desired.
For a firmer gelatin layer, allow it to chill longer before serving.
