Description

This Sushi Bowl is a delightful blend of sushi rice, imitation crab, fresh avocado, and crunchy vegetables. It’s an excellent choice for a quick dinner or a healthy meal at home, offering delicious flavors and simple preparation that can please everyone.


Ingredients

  • 2 cups sushi rice rinsed until the water runs clear
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons sriracha sauce
  • 1 garlic clove finely minced or pressed
  • 16 ounces imitation crab meat
  • 1 avocado cut into slices
  • 1 cup shelled edamame
  • 2 carrots peeled and cut into match sticks
  • 4 mini cucumbers sliced thin
  • .35 ounce roasted seaweed
  • 2 teaspoons sesame seeds

Instructions

  1. In a small pot, bring sushi rice and water to a boil.
  2. Reduce the heat and simmer the rice for 20 minutes until cooked.
  3. While cooking the rice, mix rice vinegar, sugar, and salt in a bowl until dissolved.
  4. Once the rice is done, stir the vinegar mixture into the rice until well combined.

Notes

For extra flavor, let the rice sit with the vinegar mixture for a few minutes before serving.
Feel free to add any additional toppings such as scallions or sesame oil.
