Ingredients
Scale
- 1¼ cups all-purpose flour
- 1/2 teaspoon salt
- 4 ounces Crisco
- 1/8 cup cold water
- 15 ounces pumpkin puree
- 12 ounces evaporated milk
- 3/4 cup light brown sugar
- 1½ teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 2 large eggs
Instructions
- In a large mixing bowl, combine the flour, salt, and Crisco, mixing with your fingers until it resembles coarse meal. Make a well in the center and add cold water.
- Bring the flour mixture to the center gently with the water, mixing until just combined without overmixing. Form into a flat disc, wrap in plastic, and refrigerate for 30 minutes to 1 hour.
- Remove the dough from plastic wrap and place on a floured surface. Roll it out to about 1/4" thick, ensuring it's large enough for the pie plate.
- Transfer the rolled dough to a 9" pie plate, cutting any excess leaving a 1/2" overhang. Tuck the edges under and crimp for a decorative edge.
Notes
Make sure all ingredients are at room temperature for the best mixing results.
You can customize the spices according to your taste preferences.
If you prefer a sweet crust, consider adding a little sugar to the dough.
