Description

This Black Bean and Corn Salsa is a delightful blend of fresh vegetables and zesty lime. It’s quick to make and perfect for any gathering, delivering irresistible flavor that everyone will love!


Ingredients

  • 15 ounces black beans, drained and rinsed
  • 15 ounces corn, drained
  • 1 medium tomato, diced
  • 1 jalapeño, seeds and ribs removed and diced
  • 1/4 red onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 2 tablespoons minced fresh cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon kosher salt
  • dash freshly ground black pepper

Instructions

  1. In a large bowl, combine black beans, corn, diced tomato, jalapeño, red onion, minced garlic, lime juice, olive oil, cilantro, cumin, and salt.
  2. Gently stir all ingredients together until thoroughly mixed. Taste and adjust seasoning with more salt and pepper if desired.

Notes

Chill the salsa for about an hour to enhance the flavors before serving.
Serve with tortilla chips or use as a topping for tacos and grilled meats.
You can customize the heat level by adjusting the amounts of jalapeño.
