Description

Ingredients

  • 1 cup quick-cooking oats
  • 3 oz. espresso
  • ¾ cup almond milk, plain, unsweetened
  • ¾ cup 2% greek yogurt, plain
  • 3 tablespoons maple syrup
  • 1 tablespoon chia seeds
  • Pinch of salt
  • ¼ cup 2% greek yogurt, plain
  • 1 tablespoon maple syrup
  • cocoa powder for topping
  • 12 teaspoons mini chocolate chips for topping

Instructions

  1. Blend all ingredients for the base of the oats until smooth in a blender.
  2. Transfer the blended oats into 2 storage containers and set aside.
  3. In a bowl, mix yogurt and maple syrup together until well combined.
  4. Top each oat cup with the maple yogurt mixture, then sprinkle with cocoa powder and mini chocolate chips.

Notes

Make sure to use quick-cooking oats for the best texture.
You can adjust the sweetness by varying the amount of maple syrup according to your taste.
Cocoa powder can be substituted with unsweetened chocolate for an extra chocolatey flavor.
