Description

This Tomato Miso Soup with Garlic Sesame Mushrooms combines savory miso, fresh tomatoes, and crispy garlic mushrooms for an unforgettable meal. Perfect for a quick dinner or a comforting lunch, it’s packed with flavor and easy to make.

Ingredients

Scale
  • 8 oz shiitake mushrooms, stems removed and thinly sliced
  • 1 tbsp sesame seeds
  • 2 tbsp avocado oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • juice of half a lemon
  • 1 cup cherry tomatoes, halved
  • 3 scallions, thinly sliced, whites and green portions separated
  • 1 ear of corn, kernels cut away from the cob
  • 4 cups hot water
  • 2 dry shiitake mushrooms
  • 2–3 tbsp yellow miso paste
  • 11 oz soft tofu, sliced into rounds or cubed
  • sesame oil, for serving
  • cooked rice, for serving

Instructions

  1. Preheat the oven to 425°F. Combine the mushrooms, sesame seeds, garlic powder, onion powder, 1 tablespoon of oil, and salt in a bowl. Toss to coat the mushrooms, spread them on a baking sheet, and bake for 15 minutes. Toss and bake for an additional 5-10 minutes until browned and crispy. Squeeze lemon juice on top after baking.
  2. Heat the remaining tablespoon of oil in a large saucepan over medium-low heat. Add the cherry tomatoes and a pinch of salt, sautéing for about 5 minutes until they start to break down.
  3. Add the scallions and corn to the pan, sautéing for another 2-3 minutes.
  4. Pour in 3 1/2 cups of hot water and add the dried shiitake mushrooms. Bring to a boil, then reduce to a low simmer for 10 minutes. Carefully add the tofu and cook for 3-5 minutes until warmed through.
  5. Whisk the remaining 1/2 cup of water with the miso paste until smooth. Remove the dried mushrooms from the broth, turn off the heat, and stir in the miso mixture.
  6. Drizzle sesame oil over the soup, adjust the salt and miso to taste, and serve hot topped with the roasted mushrooms and a squeeze of lemon alongside rice.

Notes

Roasted garlic sesame mushrooms add a delicious contrast to the soup’s flavors.
Use soft tofu for a creamy texture, or firm tofu for a heartier bite.
Adjust the amount of miso paste based on your taste preference for saltiness.
