Description

This Tzatziki Chicken Salad combines diced chicken, cucumbers, chickpeas, and a refreshing tzatziki dressing. It’s a simple, flavorful option for a healthy meal or casual gathering.


Ingredients

  • 1 cup plain greek yogurt
  • 1/2 cup finely grated english cucumber, squeezed dry
  • 2 tablespoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove, pressed or finely minced
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-ground black pepper
  • 3 cups diced cooked chicken
  • 1 cup diced english cucumber
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup crumbled feta cheese
  • 1/3 cup finely diced red onion
  • 1/4 cup chopped fresh dill
  • 1 tablespoon lemon juice, plus more to taste
  • 1/2 cup toasted sliced almonds
  • fine sea salt and freshly-ground black pepper, to taste

Instructions

  1. Prepare the tzatziki by combining Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, mint, sea salt, and black pepper in a medium bowl. Mix until well combined and adjust seasoning as desired.
  2. In a large mixing bowl, combine the diced chicken, cucumber, chickpeas, feta, red onion, and dill to create the chicken salad.
  3. Pour the tzatziki over the chicken mixture and gently toss until all ingredients are coated. Add additional lemon juice, then season with salt and pepper to taste.
  4. If time permits, cover and refrigerate the salad for at least 30 minutes to enhance flavors.
  5. Before serving, gently fold in the toasted almonds for a crunchy texture.
  6. Serve the salad chilled in pita, wraps, lettuce cups, over greens, or with crackers.

Notes

For a thicker tzatziki, use less cucumber or strain the yogurt.
Feel free to substitute fresh herbs based on your preference or availability.
This salad can be made ahead of time and stored in the refrigerator for easy meal prep.
