  • 6 cups washed baby spinach
  • 4 cups cubed watermelon
  • ¼ red onion – thinly sliced
  • 1 cup feta cheese
  • ½ cup cherry tomatoes
  • salt and pepper to taste
  • ¼ cup balsamic vinegar
  • ½ cup extra virgin olive oil
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey
  • 1 large clove garlic (grated)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Wash and dry the spinach, then place it in a large bowl or on a platter.
  2. Top with cubed watermelon, cherry tomatoes, sliced red onion, and crumbled feta cheese. Sprinkle with salt and pepper.
  3. Drizzle the salad with balsamic vinegar, extra virgin olive oil, dijon mustard, honey, grated garlic, and additional salt and pepper to taste. Serve immediately.

Notes
