- 3 tbsp avocado oil
- 2 cups shredded zucchini – squeezed
- 1 cup panko bread crumbs
- 2 eggs
- 1/3 cup fresh grated parmesan cheese
- 1/4 cup finely shredded mozzarella cheese
- 2 garlic cloves, minced
- 1 tsp salt
- fresh cracked black pepper to taste
Instructions
- Grate the zucchini on a box grater using the larger holes and transfer into a mesh bag or cheese cloth. Squeeze out excess liquid thoroughly.
- Place the squeezed zucchini in a mixing bowl and add the remaining ingredients. Mix well until combined.
- Preheat a large cooking pan over medium heat. Add the oil and use an ice cream scoop to portion the zucchini mixture. Shape into fritters and place them in the pan.
- Cook fritters for 4-6 minutes on each side until golden, flipping only once to avoid breaking.
- If making multiple batches, add more oil to the pan as needed.
Notes
Squeeze out as much liquid from the zucchini as possible to prevent soggy fritters.
Cook at medium to medium-low heat for even cooking throughout.
Let the fritters cook without disturbance until it’s time to flip.
