Enjoy a burst of flavor with this Burrata Peach Salad featuring juicy peaches, grilled corn, and creamy burrata. It’s quick to prepare and perfect for a fresh summer side or a light meal.

- 3 peaches sliced
- 3 ears of corn husks removed, grilled and kernels cut off
- 2 balls burrata torn into chunks
- 3 tablespoons pepitas toasted
- basil leaves
- 2 tablespoons balsamic vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup or honey
- 1 tablespoon olive oil
- Kosher salt and freshly ground black pepper to taste
Instructions
- Rub olive oil and salt on the corn cobs and place them on a preheated grill at 400°F.
- Grill corn for 8-10 minutes, rotating to ensure even cooking. When cool, cut kernels off the cob.
- In a jar or bowl, combine balsamic vinegar, dijon mustard, maple syrup (or honey), and olive oil. Shake or whisk until mixed and set aside.
- On a serving platter, arrange sliced peaches and scatter the grilled corn on top.
- Tear burrata into chunks and place over the peaches and corn, then sprinkle with pepitas and basil leaves.
- Drizzle the balsamic vinaigrette over the salad and serve immediately.
Notes
Fresh basil adds a great aroma and flavor to the salad; feel free to use other herbs like mint if desired.
For a sweeter touch, consider adding a bit more maple syrup or honey to the vinaigrette.
